Kitchen Sink Frittata:

The Kitchen Sink Frittata is a great recipe for any meal and can be adapted based on what you already have available in your fridge or garden.



Ingredients:

  • 6 eggs, beaten

  • ¼ cup milk

  • 1 cup assorted cheese, shredded

  • 2 cups assorted veggies (ex. broccoli, cauliflower, kale, onion, pepper, summer squash, zucchini, tomatoes, greens), chopped

  • 2 tablespoons assorted herbs (ex. basil, sage, rosemary, thyme, chives), chopped (optional)

  • Precooked crumbled sausage or bacon, to taste (optional)

  • 2 tablespoons olive oil or butter

  • Salt & pepper, to taste


Instructions:

  1. Preheat oven to 400°F

  2. In a large bowl, beat the eggs and whisk in the milk. Then, stir in the cheese and herbs (if using) and set aside.

  3. Place an oven-safe pan on medium-high heat and heat the oil or butter. Add in veggies and quickly sauté, seasoning with salt and pepper to taste. (For veggies, try mushrooms, broccoli, spinach, onions, tomatoes, zucchini, etc.)

  4. Make sure the veggies are evenly distributed on the bottom of the pan and, if using, add precooked bacon or sausage now. Then pour your egg mixture on top.

  5. Let sit on heat for about a minute to set the edges. Then, place pan into the oven and bake for approximately 10 minutes. When done, top should be browned and a knife inserted into the center should come out clean.
