These stir fry bowls make for a quick, easy, and healthy dinner. Serves 4.
Ingredients:
1 pound ground wild game, bison or beef
1 pound green beans, bok choy, broccoli, carrots, mustard greens or other assorted veggies
¼ cup soy sauce or coconut aminos
4 tablespoons sunflower or vegetable oil
¼ cup brown sugar
1 teaspoon garlic powder or 1 clove garlic, minced
½ teaspoon onion powder or ½ onion chopped
¼ teaspoon ground ginger or ½ inch ginger peeled and grated
3 cups cooked rice (optional for serving)
¼ cup chopped green onions (optional for serving)
1 tablespoon sesame seeds (optional for serving)
Pickled onions (optional for serving)
Instructions:
Cook and crumble ground meat in a large skillet. If using raw onion (instead of onion powder), add into pan with meat and sauté. Once ground meat is cooked, drain fat and return to stovetop.
Meanwhile, in a separate pan or wok, sauté assorted vegetables in 2 tablespoons of oil.
While meat and veggies are cooking, whisk together soy sauce or coconut aminos, oil, brown sugar, garlic, ground ginger, and onion powder (if using) in a mixing bowl. Add this to cooked ground beef.
Serve meat and veggies over rice. Top with green onions and sesame seeds.
